Our head chef, Gabe Caliendo, believes mindful eating should be both satisfying and exciting. When designing these dishes, he focused on fresh ingredients and smart swaps that make a difference.

“Dressings can make or break a dish,” Chef Gabe says. “For our new Protein Crunch Bowl, we built our dressing with fresh citrus and apple cider vinegar so it's lighter than mayo-based alternatives, but still bold in flavor. And instead of relying on fried elements for texture, we use oven-baked garbanzo beans that bring that craveable crunch in a way that feels fresh and balanced.”

He also uses honey instead of cane sugar for a lower glycemic index. It’s those thoughtful touches that keep the nutrition strong and the taste even stronger. It’s all about creating that big-flavor, feel-good balance that keeps meals exciting and satisfying.
