Meet Our Partner: Riverence Farms


Riverence Farms is a land-based trout farm in Idaho’s Magic Valley, and they’re reimagining what responsible fish farming can look like.

We’re firm believers that really good food starts long before it reaches your table. In this case, it starts with crystal-clear spring water, thoughtful stewardship, and a team that cares deeply about raising rainbow trout the right way.

That’s what led us to visit Riverence. From the start, it was clear we shared the same commitment to careful craftsmanship. Whether it’s the way they raise trout or the way we prepare it in our kitchens, care matters at every step.


A Story 75 Years in the Making

Here’s where things get pretty cool.

High up in the Rockies, fresh snowmelt slowly filters down through ancient layers of basalt and volcanic rock. It travels underground for about 75 years before bubbling back up in the Magic Valley.

By the time it resurfaces, the water is crystal clear, naturally filtered, and a steady 58 to 59 degrees year-round. 

Riverence uses a gravity-flow system, which means the water moves naturally through their farms without heavy pumps or extra energy. It’s simple and perfectly in sync with nature.


Land-Based, Ocean-Minded

We love Riverence because they’re reimagining what responsible fish farming can look like.

By raising fish on land instead of in open water, they’re able to better protect surrounding ecosystems while still producing incredible trout.

A few highlights that impressed us:

  • About one-third of their energy comes from on-site hydroelectric power.
  • They waste nothing. Scraps that don’t become fillets are turned into compost and organic fertilizer for local Idaho farms.
  • They were the first freshwater, land-based facility in the U.S. to earn ASC certification, the gold standard for responsible aquaculture.


On the Menu: Taste the Difference

When you know the story behind your food, it just tastes better. That’s why we’re so proud to feature Riverence trout in two of our dishes.

Our Smoked Trout Dip takes their responsibly raised trout and pairs it with our creamy garlic-herb sour cream. We top it with crispy capers and pickled red onions and serve it with everything bagel-seasoned potato chips. It’s smoky, tangy, crunchy and completely craveable.

If you’re in the mood for something more classic, try our Grilled Idaho Trout. We grill it simply and finish it with a bright walnut citrus butter, then serve it alongside crispy smashed potatoes and garlic green beans with charred corn, roasted red peppers and a lemon cream sauce.
